Virginia M. Fraga
Virginia graduated from Universidad Nacional de Quilmes, Buenos Aires, Argentina in 2003, with a degree in Food Engineering. As an engineer, Virginia was trained in the application of science principles and mathematics in order to provide economical solutions to technical problems. Virginia was also trained to produce and analyze food products, processes, and plant designs.
Shortly after marrying her husband, Virginia moved to the U.S. and joined Del Monte Fresh Produce, Inc., as the Quality Assurance Manager at their Boston fresh cut operation facility from 2004 to 2008. During this time, Virginia made significant improvements to the operations’ quality systems. Virginia has a strong scientist mind and a passion for R&D and Innovation. Parallel to her regular QA duties, Virginia worked on various fresh-cut fruit R&D projects and developed a private formula to inhibit browning and improve the food safety of fruits which later allowed her to obtain her first patent as a co-inventor.
In 2008 and 2010, Virginia was blessed with two beautiful children and decided to stay home for a couple of years to take care of them and enjoy motherhood. In 2011, Virginia decided to return to the workforce after a very interesting opportunity as Food Quality Consultant at Ocean Spray Cranberries, Inc, was offered to her. Virginia led and carried out various improvement projects for the implementation of Good Agricultural Practices at the farms and for the development of cranberry color methods and specifications. Due to her high performance, Virginia was offered a permanent position as a Senior Quality Scientist. During this time, Virginia applied her skills to several projects for the beverage and food industry, including improvements to plant quality metrics, corporate quality operating standards, fill weight reduction, supplier complaint program, and system standardization of COA’s, to name a few. Additionally, Virginia was assigned to lead the Quality Integration Plan of an acquired Chilean manufacturing facility which spanned a period of two years. In recognition of her exemplary work with the Chilean Quality team, she received the Above & Beyond the Call of Duty award. Virginia obtained various certifications, including FSPCA Preventative Controls for Human Food, HACCP Plan Development and Implementation, and her Six Sigma Black Belt.
Virginia joined Boston Baking in 2018 as the Operations Excellence Manager. Virginia’s experience, passion, and drive as a Team Leader will be a key component in bringing Boston Baking Operations to a new level of success.
